Product Detail : With its characteristic blue-veined appearance created by a greenish mould, Gorgonzola is a soft yellowish-white uncooked cheese. Made with pasteurised milk, the mild version is creamy, soft and slightly pungent whilst sharp gorgonzola's aging makes its texture more solid, intensifying its marbled look, and its flavour becomes strong and distinct.
How to try it : while the most traditional of all combinations is with mascarpone cheese and walnuts, Gorgonzola can also be eaten with fruit such as strawberries, pears, kiwis, figs and apples, as well as with vegetables. Excellent with honey, mostarda and jams, it is used as a base of many sauces for pasta or rice first course dishes. Wines that heighten its flavour are Moscati passito (a sweet dessert wine) or Marsala for sharp gorgonzola, which requires a red, structured wine, whilst the flavour of mild, buttery type of gorgonzola is enhanced by soft wines such as Pinot Blanc or Novello.
